A Story, a recipe & a picture...

Last week I read "My Father's Daughter," by Hannah Pool, who was adopted from Eritrea, about her trip back to that country to meet her birth family. It was a powerful, moving story - but I kept getting sidetracked by every mention of the food. It reminded me of this little Ethiopian restaurant (yes, I know they're two different countries) that I loved to eat at in New York. I haven't eaten Ethiopian food since living there, but I've never forgotten it.
 

So the book inspired me to search online, and I found ethiopianrecipes.net. This week I made my favorite yellow pea dish, and we even tried our hand at the bread, which is extremely easy to make. Sam enjoyed making the bread, and he loved eating his "plate."

Spirit of Peace Recipes #3 & #4
Prepared & Served at home by Rita & Sam


Yellow Split Pea Stew

3 c. water + 2 T divided
1 c. dried yellow split peas (I finally found them at Whole Foods)
2 T olive oil
1/2 small onion, chopped
2 cloves garlic, minced
1 inch-long  fresh ginger, chopped
1/4 t. turmeric
1 t. salt
 
1. Place 3 cups water and peas in saucepan. Bring to a boil; reduce heat, and cook about 30 minutes.
 
2. Heat oil in skillet over medium high heat and saute onions. Add garlic, ginger, and turmeric, cook 1 minute. Add 2 T water, cover and cook on low 3 minutes.
 
3. Add mixture to peas, with salt. Simmer until peas soften, about 30 minutes.

Ethiopian flat bread (injera)
 
3 c. flour
1 1/2 T baking powder
1/2 c whole wheat flour
1/2 c cornmeal
1 T yeast
3 1/2 c. warm water
 
1. Mix ingredients. Let sit covered for 1-6 hours.
 
2. Whip in blender, 2 c. batter with 1/2 to 3/4 c. water until the consistency of pancake batter.
 
3. Cook in non-stick pan without oil over medium to medium-high heat. Pour batter to coat pan. DO NOT TURN OVER. Bread is done when bubbles appear on top. It's like a crepe, only thicker.
 
Put your dinner directly on the bread. Tear off pieces of the bread to eat the food, then eat your plate that has soaked up all the sauces. Yum!

We will also discuss Walter Brueggeman’s book, The Bible Makes Sense, which gives a comprehensive overview of the content of the Bible and what it means to us today. Prayers for

  • Family & friends of Cylia's mother, Virginia, who died Wednesday of complications secondary to Alzheimer's.
  • Lauryn who will soon pursue a new path at MCC.
  • Marcus who is suffering from health issues.
  • Rita's friend Roberta & her son (Sam's age) who were in a terrible car crash. The son broke his leg and Roberta is expected to recover, but it will take a long time.
  • Transgender friends who are undergoing treatments and surgery.
  • Friends who are searching for new jobs.
  • Department of Defense Officials as they seek to end "Don't Ask, Don't Tell."
  • American and other world leaders as they search for solutions to the global economic crisis, nuclear proliferation and global warming.
  • World leaders and citizens as we work to eliminate terrorism and its root causes
  • The 100's of 1000's who have lost their jobs, homes and/or their life savings in the disastrous economic downturn.
  • Those who have been lucky enough to find new jobs during these difficult economic times.
  • Members, families & friends of SOP and Community UCC, who continue to deal with anxiety, depression, Alzheimer's Disease, diabetes, other mental & physical illnesses, family problems, financial hardships & loss of loved ones.
  • Military veterans, their families and all others who have served their country. Injured veterans and those who care for them. Families & friends of members of the military lost to war.
  • Those at home and abroad, who continue to suffer unthinkable losses because of serious disease, volcanoes, hurricanes, typhoons, tornadoes, earthquakes, tsunamis, storms, floods, heatwaves, wild fires, drought, airplane crashes, train wrecks and other disasters worldwide.
  • The thousands of soldiers and citizens of Iraq and Afghanistan (www.iraqbodycount.net; http://www.icasualties.org/oef/), who have been killed during the TRAGIC, ongoing wars in those countries.
  • Victims and the perpetrators of genocide, oppression, wars, military skirmishes, abuse, school shootings, piracy, torture, and terrorist attacks around the world.
  • The UCC Coalition for Gay, Lesbian, Bisexual, Transgender and Questioning (GLBTQ) concerns (The Coalition) and the fair treatment of Gay, Lesbian, Bisexual and Transgender citizens of this and other countries around the world.
  • Our earth and the welfare of animals who are our planetary co-inhabitors.
